When Ireland imposed a tax on malt in 1785, Jameson began mixing in unsprouted barley to pay less tax. But people liked the new flavor better. Tax avoidance measures remain a feature of Irish pot still whiskey today.

01 · Two barley

Use malt and raw barley together

Sprouted barley provides enzymes that convert starch into sugar and a malty flavor. Unsprouted barley adds a creamy texture and peppery spice.

02 · First distillation

Remove alcohol from fermentation broth

Remove the water and solids from a large copper pot still. It is the first distillate that still has a harsh scent and low alcohol content.

03 · Second

Concentrate once more

As it passes through the second still, the heavy components are reduced and the alcohol and flavor are spiritd again. If it's a typical scotch, it often ends here.

04 · Third

Irish smoothness

Jameson distills once more. The proportion of light ingredients increases and the texture becomes smoother.

05 · Grain

Add separate light spirit

Corn-based grain whiskey is made in a continuous still. It combines full-flavoured pot still whiskey with lighter, more floral grain whiskey.

06 · Aging/Blending

After ripening, mix into one.

Pot still and grain spirits are aged for at least 4 years in ex-bourbon barrels and sherry casks. Afterwards, the blender determines the proportions to match the spices, nuts, vanilla and light sherry notes.

Citrus and flower/vanilla axes are similarly long. The light, triple-distilled spirit and soft grain whiskey create bright fruit and floral notes.

There is medium oak and malt and very little peat. The peppery pot-still spice is a textural feature that these six axes do not show separately.

John Jameson was born in Alloa, Scotland, and came to Dublin in the late 1770s. The name began in 1780 at the Bow Street Distillery and continues today at the Middleton Distillery in Co. Cork.

The tradition of using malted and non-malted barley was once a practical choice to avoid taxes on malt. As a result, the spice and texture provided by raw barley became the characteristics of Irish pot still whiskey.

Jameson Original is not only pot still whiskey or grain whiskey. The two triple-distilled styles are aged separately and finally balanced into one bottle.

Appendix

Jameson is a person's last name. The -son in the name is a remnant of an old patronymic surname, but the brand itself refers to John Jameson.
