01 · Blend

Start with corn

Corn, rye, malted barley and limestone cave spring water are fermented and double distilled. At this time, the alcohol is still transparent.

02 · Maple tree

Use wood as charcoal, not barrels

Charcoal is made by burning hard sugar maple trees. It is not a process of adding sweetness, but a preparation to adsorb harsh ingredients.

03 · 10 feet

Slowly descend three meters

The spirit drips from the top of the charcoal layer. Charcoal absorbs some of the ingredients that cause unpleasant and harsh scents and softens the texture of the liquid.

04 · Lincoln County Process

Strain once before ripening.

The order of finishing is different from the typical finishing process of filtering after leaving the barrel. The key to Tennessee whiskey is to first encounter charcoal before obtaining the scent of wood.

05 · New Orc

Then into the charred barrel

The liquid that escapes the charcoal goes into newly made Charing white oak barrels. Caramel, vanilla and wood aromas mainly occur here.

06 · Results

Remove the charcoal and add the barrel.

Maple charcoal reduces harsh aromas, and charred oak barrels add color and caramel and vanilla aromas. The two trees treated with fire play different roles.

The oak, flower, and vanilla axes are long. This is because the caramel and vanilla aromas obtained from newly charred American oak are the most pronounced.

peat and Sherry are barely there. The key is the texture that becomes softer as it passes through the charcoal, rather than the smoke taste of the charcoal.

This is a sensory impression value that maintains the same six axes for comparison with Scotch.

Jack Daniels uses spring water from a limestone cave in Lynchburg, Tennessee. The starting point is low-iron water and a corn-based grain mix.

Charcoal mellowing is a Lincoln County process in which the spirit is passed through sugar maple charcoal before maturation. It is then aged in newly charred white oak barrels, acquiring amber color, caramel, vanilla and wood aromas.

Old No. There are many theories about the number 7, but the brand has not confirmed one. This page does not present any of those theories as fact.
